Whole Wheat Spinach Feta Quiche

I haven't made quiche in quite a while, and had a ton of eggs to use up this week. About a dozen boiled eggs later, I decided quiche was the way to go to finish off the eggs. Here is a link to my last quiche post from about 17 months ago:

This time, I used whole wheat flour for the crust, and used six whole eggs mixed with milk for the filling. I also used the following:

1/2 of a fresh mozzarella ball, sliced
2/3 cup frozen chopped spinach, defrosted on the counter for about 30 minutes
5 chopped up Trader Joe's frozen pre-cooked turkey meatballs
1 small chopped up tomato
1/2 cup crumbled feta cheese

After baking the crust for the initial 20 minutes covered loosely in foil, I topped it with the tomatoes and spinach, then added the feta and mozzarella before pouring the egg mixture over top. I baked it for another 35 minutes, uncovered, and knew it was time to remove it from the oven when the top of the mozzarella slices were slightly golden brown. I let it sit on the counter to cool for about an hour, and it sliced perfectly for lunch. Healthy and delicious!

Super Quick, Healthy Side Dish


I was looking for something easy to serve as a side dish, and at the same time, wanted to use up some of my canned veggies that don't get a lot of attention. I realize summer isn't an ideal time to use canned veggies, but I was in pantry clean-out mode, so canned veggies it had to be. :)


Ingredients:

One bag of frozen organic brown rice from Trader Joe's, cooked (3 min in microwave)
One can Rotel tomatoes with chiles
One can black beans
One can sweet corn
1 t ground cumin
pinch of salt
pinch of black pepper
One cup plain Greek yogurt
1/2 cup shredded cheese to sprinkle on top



Mix the first nine ingredients together, pour into a small baking dish (8x8 would work), and bake at 350 degrees for about 25 minutes. Sprinkle the cheese on top, and bake for the last five minutes. Yields about 4-6 servings. Enjoy!

The Perfect Summer Sandwich


Now that summer is in full swing, our local Farmer's Market has become one of my favorite places to shop. This morning I picked up the ingredients to one of my absolute favorite summer dishes--the mozzarella/tomato/pesto sandwich. I bought live basil, a bunch of vine ripened tomatoes, a loaf of Italian bread, and some fresh mozzarella cheese.

I love to make homemade pesto for pasta, sandwiches, and spreads, and I usually make it pretty garlic-heavy. I decided to tone down the garlic a bit so I can use some of the leftovers to make Audrey some pasta tomorrow. Instead of a head of garlic, I used about 3-4 cloves. :)

Pesto
1/2 cup pine nuts
1/4 cup olive oil
3-4 cloves of garlic (I buy the large container of fresh peeled garlic from Costco, divide it up, chop, and freeze it for quick use in recipes)
1/2 cup grated parmesan cheese
5 large basil leaves
1/2 tspn salt (to taste)

Combine all ingredients in a food processor (I used my small one since this is a small amount of pesto), and grind/chop until you reach the desired consistency. You'll need to stop and scrape the processor bowl with a spatula every few seconds.







Slice the bread in half lengthwise, and then cut each section into thirds so you end up with six halves (for three sandwiches, or two sandwiches with about 1/3 of the loaf leftover).

Spread a thin layer of pesto on each half of the bread, then top with two slices of mozzarella, and two-three slices of tomato (sliced thin and seeded).



Close the sandwiches, place on a baking sheet, and bake for about 12-15 minutes at 350 degrees. This bread ended up being a little thick, so I sliced 1/2 of the bottom slice off of each sandwich. When I have used an Italian loaf from the store in the past, I didn't have to do this. It just depends on the thickness of your bread and your preference.

One of My Favorite Dishes~~Enchiladas!


This is a recipe I have been making for years, and every time I make it I change it up a bit. I usually use ground turkey (which I did this time), but the enchiladas are also delicious with shredded or chopped chicken, or ground beef. I also sometimes saute the veggies in butter (this time onions, tomatoes, green chilies, and black beans), but I left out the butter this time.

The best tortillas I have found at the store are the handmade ones from Trader Joe's. They have flour ones and whole wheat ones. This time I used the flour ones. They are so so good!


Ingredients:

1-1.5 lb lean ground turkey
1/2 t ground cumin
1/2 t garlic powder
1/2 t onion powder
Trader Joe's Flour Tortillas
Trader Joe's Enchilada Sauce
One can Trader Joe's Organic Black Beans (I often use dried beans, but they take more preparation)
One small can green chilies
One small/medium tomato, chopped (not too fine)
One small onion, chopped (not too fine)
1/2 cup salsa
1 1/2 cups shredded Mexican blend cheese
1/2 cup plain Greek yogurt

Brown the ground turkey. Drain if necessary.

Add the chopped onion and tomato to the ground turkey, and cook on medium heat for 2-3 minutes, stirring frequently.

Add the can of black beans (if using dried black beans, add them when you add the onion), and the can of green chilies. Stir for another minute while cooking on medium heat.

Stir in the Greek yogurt and salsa and continue to cook on low heat.
Fill one tortilla at a time with a large spoonfull of the mixture, about 2/3 cup, and sprinkle cheese on top of the meat mixture. Wrap the tortilla closed, and place it on one end of a greased glass baking dish. Do the same 4-5 more times, depending on how full each tortilla is and how many will fit in the dish.


Pour the bottle of enchilada sauce over the enchiladas, and bake for 25 minutes at 350 degrees. After 20 minutes, remove the enchiladas from the oven, sprinkle the remaining cheese over them, and bake for another 7-10 minutes.

Skinny Spaghetti Pie


A lot of my friends know how much I love spaghetti pie. I have been making it for a while, and over the years I have modified it to make it healthier, but it is still absolutely satisfying and yummy. :)

The original recipe called for ground beef, spaghetti noodles, a jar of marinara, cream cheese, sour cream, shredded cheddar, and green onions.

I now make it using the following list of ingredients:


1 lb of lean ground turkey
1/2 box of whole wheat thin spaghetti
1 jar of marinara (or blend your own stewed/crushed tomatoes in a food processor)
1/2 cup of cream cheese
1 cup of low fat plain organic yogurt (are you surprised???) :)
1 TBSP onion powder
2/3 cup green onions

2/3 cup shredded cheddar/jack cheese

***And before you wonder how something that contains cream cheese and shredded cheddar can be healthy, think about this. You are going to eat one serving of this dish (which is definitely filling), which means you will only be eating 1/6 of the entire pie. 1/6 of 2/3 of a cup of shredded cheese isn't much (it's 1/9 of a cup to be exact). You will also only be eating 1/12 a cup of cream cheese in your serving. That is miniscule. Sure, you can use low fat cream cheese and low fat cheese, but I generally prefer not to (especially for the cheese; lowfat cheese is NOT the same). Stick to the serving size and you'll be full, happy, and healthy. :) ***


Preheat your oven to 350 degrees.

Brown the turkey and drain the grease (you may not have to drain any grease if the turkey is lean enough). Pour in the jar of marinara, and simmer on low for 15 minutes while stirring occasionally.

Cook the spaghetti according to the package, which should be pretty quick since you are using thin spaghetti. Drain and set aside.

In a mixing bowl, blend the cream cheese, yogurt, onion powder, and chopped green onions.

Pour the cooked pasta into a greased (100% canola oil spray) baking dish (I used a piece of Polish pottery that is slightly larger, but you can use an 8x8 glass dish). Using a spatula, pour and smooth the yogurt mixture over the pasta. For the third layer, you will pour the ground turkey mixture over the yogurt mixture. Finally, sprinkle the shredded cheese evenly over the top. Place the baking dish in the oven for 20 minutes at 350 degrees.


Pull it out of the oven, let it cool for 10 minutes, then serve with a side salad.



This recipe yields six servings.

Sausage and Veggie Spaghetti Sauce

The fall weather took over this past week, which put me in the mood to use my crock pot. There is nothing better than a warm home filled with the aroma of something simmering or stewing in a slow cooker on a cool day.

I decided to come up with a new spaghetti sauce that all three of us (me, my husband, and my 9 month old) could enjoy. This meant omitting one of my favorite ingredients, crushed red pepper. I'm not sure my daughter is ready for such spicy food, although she has quite a broad palate for a baby (she loves my chili!) :-)


I picked up some ingredients at Trader Joe's (one of my favorite grocery stores), and got to work! Here is what I used:

Trader Joe's sweet pork sausage (large hot dog-sized links, and I squeezed the sausage out of the casings)
2/3 cup fresh basil
1/4 cup fresh garlic
One organic red pepper
One organic yellow pepper
8 organic white mushrooms
One can of stewed tomatoes (already had in the pantry, not from TJ's)
1/8 cup olive oil
One can of organic tomato sauce (not from TJ's)
One can of organic diced tomatoes
One TBSP brown sugar
1/2 tspn oregano
Salt to taste
Pepper to taste

First, squeeze the pork sausage out of the casings into a hot skillet. Cook the meat, drain the grease, then set the meat aside.

Chop up the red and yellow peppers and mushrooms and set aside.

Use a food processor to finely chop the garlic and basil together (if you don't have a food processor, just chop them up as finely as you can with a knife). Coat the bottom of a skillet with olive oil, turn it on medium heat, and add the garlic/basil mixture to the olive oil.


About one minute later, add the chopped up peppers and mushrooms.


While the veggies are cooking, be sure to use a spatula to mix and turn them so they don't burn.

Add all of the tomatoes to the food processor and mix for about 10 seconds. Pour the mixture into the same skillet. Add one TBSP of brown sugar and stir it all together. Add the sausage.

Now, everything is in one skillet simmering together. You should continue to turn and mix as it cooks. Add salt and pepper and taste as you go. You can also add some oregano to taste.

After about five more minutes, transfer it all into your slow cooker. Turn it on the low setting and cover. Simmer for 6-8 hours.

I served it over whole wheat angel hair, and added a side salad of mixed greens, cucumbers, strawberries, toasted almonds, and a white balsamic vinegar/olive oil dressing. Delicious! (I would have definitely preferred more of a kick, but like I mentioned earlier, I wanted my daughter to be able to eat it. For a spicier version, add 1 TBSP of crushed red pepper to the sauce while it is simmering on the stove. I also would have added a chopped up yellow onion, but I forgot to buy one and wasn't running to the store for just one item!)
